Balsamic Glazed Vegetable Meatloaf
Apart from working on creating my own recipe development, another favourite thing of mine in the kitchen is trying out other recipes.
So I couldn't believe I pulled this off the first time round. And it was so good, I made another batch the next day.
Meatloaf, for whatever reason has always seemed to be one of those foods that I just had the idea in my head that it was just too complicated to make. That was until I came across a recipe on Google+ by Jeanette Chen - you should should check out her blog for the exact recipe - that was like a revelation!


Her meatloaf recipe was probably the first one I have ever taken the time to look beyond a mere glance.
Of course being me, I did end up adding my own twists to the recipe by making a few additions and subtractions with a few things.
So as I already stated, I made this again the day after my first attempt. By then I already had an idea what it was supposed to taste like, I made some subtle changes here and there to the original recipe which absolutely worked for me.

Ingredients
  • 900g Lean Mince Beef
  • 1 tbsp Olive Oil
  • 1 Large Zucchini (finely diced)
  • 1 Bell Pepper (finely diced) 
  • 3 Garlic Cloves (crushed)
  • 2 Small Fresh Chillies (chopped)
  • 2 Eggs (lightly beaten)
  • 1 tsp Fresh Thyme
  • 70g Bread Crumbs
  • 50g Parmesan Cheese (finely grated)
  • 2 Small Shallots (chopped)
  • 2 tbsps Fresh Coriander (shredded)
  • 1 Vegetable Stock Cube
  • 2 tbsps + 1 Cup Ketchup
  • 2 tbsps Balsamic Vinegar + 1/4 Cup
  • 2 tbsps Honey
  • 100g Chestnut Mushrooms (pulsed)
  • 125g Button Mushrooms (pulsed)
  • 2 tbsps HP Sauce
Methods
    1. Preheat oven to 175 degrees C
    2. Heat oil in a large pan over medium heat
    3. Add zucchini, pepper, mushrooms, garlic, shallots and stock cube. 
    4. Saute until vegetables are softened. Remove from heat and set aside to cool
    5. In a mixing bowl, combine minced beef, eggs, thyme, coriander, cheese, sauteed vegetables, ketchup and HP sauce
    6. Mix together thoroughly. Preferably with your hands.
    7. Line a bread tin with a baking sheet and mould in the meatloaf mixture
    8. Whisk together remaining ketchup, balsamic vinegar and honey, and brush all over the top and sides of the meatloaf
    9. Place in preheated oven and bake for 1 hour
    10. Remove from oven and carefully turn over the bread tin onto a baking sheet lined baking tray to remove the meatloaf. 
    11. Remove the baking sheet, and return meatloaf into the oven for 10 minutes to brown the sides and underneath
    Overall, this recipe was very easy to make and versatile enough to allow for some changes as desired.

    I served this with my home made Cornbread.

    Serves 8-10
