Corn Bread |
Savoury breads are always a feature in my kitchen. I have already shared the recipe of one of my savouries - the
Cheesy Sun-dried Tomatoes Bread a while back so I thought it was about time to share another particular favourite. Corn Bread!!!
I don't know why but for some reason I always just seem to associate Corn Bread with "wholesome comfort" on so many levels, and this is a recipe that is so easy; you could make it on "auto-pilot" mode.
Its a wonderful accompaniment for those soothing winter
soups.
Ingredients
- 195g Yellow or White Cornmeal
- 60ml melted Butter
- 240ml Milk (whole or semi-skimmed)
- 135g Plain Flour
- 90g Brown Sugar
- 1 Egg
- 1 tbsp Baking Powder
- 1/2 tsp Salt

Method
- Pre-heat oven to 200 degrees C
- Into a mixing bowl, add melted butter, milk and egg then whisk thoroughly
- Add cornmeal, flour, sugar, baking powder and salt; and gently fold ( Do not be concerned if it is still a bit lumpy)
- Pour mixture into greased bread tin
- Bake for 40 minutes until golden brown (Insert a knife into the bread to ensure it is cooked through)
- Remove from oven and allow to rest for about 10 minutes before serving
