Coconut Cookies |
I never really planned on making these, but it just so happened that I had time to kill in between waiting for the dough for my
Petits Pains au Lait to prove; plus the ingredients I needed were all around me.
Besides this is always perfect for the elevenses or those chilly evenings with a nice cuppa. On a cautionary note, these cookies are very addictive ☺.

Ingredients
- 150g Plain Flour
- 1/2 tsp Bicarbonate of Soda
- 1/4 tsp Salt
- 110g Brown Sugar
- 100g Castor Sugar
- 1 Egg
- 1tsp Vanilla Extract
- 100g Desiccated Coconut
Method
- Preheat oven to 180 degrees C
- Mix flour, bicarbonate of soda and salt and set aside
- In another mixing bowl, mix the butter, brown sugar and castor sugar until smooth. Alternatively, combine using a food processor
- Add egg and vanilla extract, and continue mixing until light and fluffy
- Gradually blend in the flour mixture, and add desiccated coconut last
- Line a baking tray with an ungreased baking sheet and drop dough onto tray using a teaspoon. Ensure to leave enough space between the cookies
- Bake for 8 minutes or until slightly toasted
- Remove from oven and leave to cool
